Japan has a huge fishing tradition. It also has a fleet of very large processing ships that travel with the fleet. They travel the world and can catch and process in many cases cheaper that most others can. One drawback is the methods that they use to cathch the fish. The use huge nets that cath everything in there path. They keep what they want and pitch what they do not want to keep.
The fish is just as good. Just different ways how to go about fishing and the money it cost to produce a product to go in the stores.
